That<\/strong> is used to introduce restrictive<\/strong> relative clauses<\/a>\u2014those that give essential information about the noun or noun phrase they modify (e.g., \u201cBook the flight that leaves at 7 a.m.<\/strong>\u201d). Restrictive clauses are not set off by commas.<\/p>\n

Which<\/strong> is used to introduce nonrestrictive<\/strong> relative clauses<\/a>\u2014those that give nonessential details about the noun<\/a> or noun phrase they modify (e.g., \u201cMy assistant booked the earliest flight, which leaves at 7 a.m.<\/strong>\u201d). Nonrestrictive clauses are set off by commas.<\/p>\n

In British English, \u201cwhich\u201d can also be used (without commas) in restrictive clauses.
